Shun Kanso Hollow-Edge Paring Knife, 3.5"

Hollow-edge refers to the small scallops ground into the sides of the blade. On the Shun Kanso paring knife, it’s part of the blade design and a key visual cue of this style.

In Shun’s Kanso line, the blade is made with Japanese high-carbon steel that’s designed to take a razor-sharp edge and hold it longer. It’s also hand sharpened to a 16° double-beveled edge for smooth, precise cutting.
